Spent mash, stillage, pomace. We speak fermenter.
The Hill Country has 100+ wineries and a growing distillery cluster centered on Dripping Springs — the legislatively designated Distillery Capital of Texas. Most septic haulers don't know what to do with beverage-industry waste. We do.
What we haul
Liquid waste streams unique to beverage production. Viscous, high-solids, sometimes high-sugar or high-alcohol. We have the equipment, the disposal partners, and the documentation chain to handle it without blocking your production schedule.
- Distillery stillage (post-distillation residue from mash)
- Brewery spent grain slurry and fermenter cleanings
- Winery pomace slurry and tank wash water
- CIP (clean-in-place) waste and caustic wash
- Fermenter and tank bottom cleanouts
- Emergency haulouts during batch changes or equipment failure
Why beverage producers call AJ
We understand the waste stream
Stillage isn't septic sludge. Pomace isn't grease. Wrong hauler, wrong truck, wrong disposal — we've seen the mistakes. We don't make them.
Documentation for your TTB and TCEQ records
Every haul is manifested. Gallon meter reading on the invoice. Disposal facility named. Auditable chain, start to finish.
Schedule around your batch timing
Post-run cleanups, seasonal harvest surges, fermenter turnover — we fit the cadence. You shouldn't delay a batch because a truck didn't show.

Frequently asked
Can you haul during a production run?
Usually yes, if access is safe. We've done mid-run swaps for distilleries on long batches. Give us the schedule and we'll fit.
What about high-BOD wash water from CIP cycles?
Yes. High-BOD liquid waste is part of what we're set up for. Where it goes depends on the facility and jurisdiction — we'll walk you through the disposal chain.
Do you handle pomace?
Pomace slurry yes. Dry pomace (solids only) typically goes to compost; we can connect you with a partner for that.
Can you provide a service agreement for our TTB records?
Yes. Written agreement, per-haul documentation, annual summary on request.
